4 oz lard
6oz caster sugar
Cream these ingredients together
Mix 2 tsp syrup with 2 tsp boiling in a cup and add to above mix.
8ozs self raising flour
2 teacups of porridge oats
½ tsp baking powder
Few drops of vanilla essence
Mix all together, then roll small spoonfuls of the mix into balls. Place on a baking tray and press slightly with a fork.
Bake at 180°C, 160°C fan or 350°F
till golden brown.
Cool on a wire rack then sandwich together if desired with butter cream

1 tsp boiling water
2 drops vanilla essence
